These lovely little mushrooms grow naturally on Beech trees, in brown or white clusters. Tekoa Farms markets cultured Shimejis that were grown on a bed of sterilized substarte straw in a controlled environment.
Available in packages of 150 grams, with a small head and long stem, they resemble a bouquet of small flowers, have a crispy and pleasing texture, long shelf life, stimulate the taste buds, and add flavor and decoration to every dish. When cooked, they develop a nutlike flavor but are slightly bitter when uncooked.
The residual growth base must be removed before cooking.
