Chanterelle is considered by many to be the premium mushroom of wild mushrooms. In nature, it grows in clusters in mountainous areas.
It has a fruity aroma somewhat reminiscent of apricot and a slightly nutty flavor. Some say that the Chanterelle has a pepper-like taste and therefore it is also referred to as "The peppery mushroom".
Due to its' unique flavor and aroma, Chanterelle is considered a "gourmet mushroom" by many chefs worldwide.

After soaking in hot boiled water for 10-20 minutes, cook the mushrooms in soups, sauces, stews etc.
The strained soak water, with its mushroom taste, is recommended for use as well .
